Impact of Dietary Habits on the Chemical Degradation of Non-Carious Cervical Lesions

Resumo

INTRODUCTION: This study aimed to evaluate the effect of nutritional habits and their frequency on chemical degradation of dental structure, which is one of the potential factors for the development of non-carious cervical lesions (NCCL). METHODOLOGY: Sixteen patients completed a food frequency questionnaire (FFQ) to assess dietary intake and nutritional habits. Based on the foods reported, standardized samples of each item were prepared under controlled conditions to ensure reproducibility and comparability. The pH and titratable acidity of these food samples were measured in the laboratory using standardized protocols, and the results were used to characterize the acid load associated with each participant's dietary patterns. Data were subsequently analyzed to compare the dietary profiles of patients with and without non‑carious cervical lesions (NCCLs). RESULTS: The analysis of the food frequency questionnaires (FFQs) enabled the identification of the most frequently ingested food groups, revealing that the consumption of vegetables and fruits was approximately three times higher (p=0.0001) in patients presenting NCCLs compared with those without NCCLs. The total sum of the pH values of the foods consumed by the NCCL patients, considering their frequency of ingestion, was lower when compared to patients without NCCL (p=0.014). The finding is reversed when the titratable acidity values are evaluated (p=0.015). CONCLUSION: Nutritional habits and their ingestion frequency change the pH and titratable acidity of the oral environment, and may contribute to the chemical degradation of dental structures.
